Quick and Healthy Dinner Recipe:

We know that when life gets hectic, healthy eating often falls to the wayside. But, maintaining a nutritious diet is one of the most important parts of achieving and maintaining your weight loss goals. That’s why we’re sharing one of our go-to dinner recipes that’s quick, easy, and packed with nutrients: 15-Minute Veggie Stir-Fry.

Here’s what you’ll need:

1 tablespoon olive oil

1 bell pepper (sliced)

1 zucchini (sliced)

1 carrot (thinly sliced)

1 cup broccoli florets

1/2 cup snap peas

2 cloves garlic (minced)

1 tablespoon soy sauce (or tamari for a gluten-free option)

1 tablespoon hoisin sauce (optional for sweetness)

1/2 teaspoon red pepper flakes (optional for heat)

1/4 cup water or vegetable broth

Cooked brown rice or quinoa (to serve)

Instructions:

Heat olive oil in a large skillet over medium heat.

Add garlic and stir for about 30 seconds, until fragrant.

Add all your veggies (bell pepper, zucchini, carrot, broccoli, and snap peas) to the skillet and stir to combine.

Pour in the soy sauce, hoisin sauce, and red pepper flakes, then add the water or broth to help steam the veggies.

Cook for about 5–7 minutes, stirring occasionally, until the veggies are tender but still crisp.

Serve over your cooked brown rice or quinoa, and enjoy!

Pro tip: You can add tofu, chicken, or shrimp to this recipe for an extra protein punch!
